I own and regularly consult my Diane Kennedy Cuisines of Mexico book; I’ve followed her no soak advice for some time now, with excellent results.
But when I read the bake your beans covered in the oven idea, the lightbulb got real bright – that’s sheer brilliance, and I’m all over it!
Interesting. I’ve only ever cooked beans in a crock pot, so I’ve never soaked or even really thought about it. I don’t particularly enjoy baked beans, but it’s the sugary sauce that turns me away, not the texture or flavor of the beans themselves. Might be worth trying.
Yup, me neither for the typical baked bean recipe – but with some onion, garlic, cilantro, and jalapeño, this I gotta try!
