  1. Very informative. I have discovered that I have to like the weight and feel of the knife as much as anything. But would like to know more of specific brands or makers. I have wustof knives. They are above average but I would love one really good knife since I love cooking.

    1. Couldn’t agree more, Dianne.
      For you, I wholeheartedly recommend getting in touch with Andy Gladdish. He’s a regular at the B’ham farmers market – I went and met with him several times designing my knives.
      He’ll have a whole bunch of examples for you to try, and from them, you can get exactly what you want.
      Chefs knives from Andy will run you upwards of $200, but it’ll be exactly what you want and will last a couple lifetimes.
      Can’t understate what a joy they are to use!

  2. My favorite small knife is a Victorinox tomato knife with serrated edges, costs about $5-6 and stays sharp for a long, long time. Cheap thrills! BUT as for what I spend on trees and cool perennials, now that’s another story!

    1. He’s on Facebook, I’ll connect y’all! And actually, that Swiss Army steel is some good stuff – Sharpens easy, holds an edge well. My favorite folders are the US made Kershaws designed by Ken Onion – Sandvik high carbon steel blades – You can shave with ’em, and they hold really well.

  4. Great article. Knives are an essential part of every kitchen. Without knives, it is impossible to work in the kitchen. I always prefer to use good quality knives.
